Ingredients 1 Lb Capri * 1 tsp. vanilla * 1/2 cup sugar * 2 eggs * Dash Cinnamon * 1/2 pint sour cream * 1/2 tsp vanilla * 2 Tbsp. sugar * 10 oz strawberries, drained (hold juice) * 2 Tbsp cornstarch Graham Cracker Shell 18 Graham crackers, 1/4 cup suger 1/2 cup butter. To make shell, crumb crackers. Mix with sugar and butter. Press into 9" pie plate. Chill Beat Capri, 1/2 cup sugar, 1/2 tsp vanilla, eggs and cinnamon. Place in Graham cracker shell. Bake for 20 minutes @325F. Remove from oven. Raise oven temp to 450F and cover pie with a mixture of sour cream, vanilla and 2 tbsp. sugar. Bake 5 minutes. Remove from oven. After Thoroughly cooled, add strawberries. Place the berries upside down , filling the center of the pie. To make glaze, combine 2 Tbsp. of cornstarch to leftover juice in sm. sucepan. Cook, stirring continuously over medium beat until mixture is thick and clear. Cover pie with glaze. Cool Thoroughly. |
